Gluten and dairy free chocolate chip cookies

I have been on a cookie kick lately but it can be hard to bake yummy treats when you have food allergies. I found a great recipe to share with you guys that has all the tastiness of regular cookies without the gluten or dairy. Let me know what you think!
 
Ingredients
1 cup plus 3 tablespoons gluten free flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 shortening
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup baking chocolate chips
 
 
1. Preheat the over to 375º and line 2 baking sheets with parchment paper. (I love the pink gingham parchment paper from Cost Plus) In a small bowl, whisk together the flour, baking power, baking soda and salt.
 
2. In a large bowl and using a fork, beat together the shortening, brown sugar and granulated sugar until fluffy, about 2 minutes. Beat in the egg and vanilla. Gradually mix in the flour mixture; stir in the chopped chocolate.
 
3. Using a 1½-inch scoop or a rounded tablespoon, drop the dough 2 inches apart onto the prepared baking sheets. Baking until golden at the edges, 10 to 12 minutes. Let cool for about 2 minutes. Using a spatula, transfer to a brown paper bag-lined surface or a wire rack to cool.

Sipping Saturday- Pineapple Margaritas!

I feel like summertime is the perfect time to start sipping margaritas and these are super yummy! 

Instructions
Using a blender or food processor, blend 1 cup fresh pineapple chunks into a smooth purée. Pour purée into a shaker or pitcher along with a squeeze of lime juice, orange juice, 1/8 cup sugar, 1/4 cup tequila, and 3 tablespoons orange liqueur. Add about a cup of ice and shake or stir vigorously for 1 minute until mixture is well chilled.

 

Squeeze a little lime juice on one plate and sprinkle salt and coarse sugar on another plate in an even layer. Prepare two glasses by dipping the rim of each glass into the juice and then into the salt/sugar mixture until well-coated. Fill glasses with fresh ice and strain margarita mixture into glasses. Garnish with lime wedges and pineapple chunks, if desired.

Wedding wednesday-wedding bands

Dino Boys wedding band arrived this week and I have to say we are both in love. He wanted something a little different for his ring and I think we achieved that! His ring is one part genuine Jack Daniels barrel and one part titanium. Its also one part he never wants to take it off which makes this girl pretty happy! What does your husbands ring look like?
